Who doesn’t love cake for breakfast? Olive Oil Cake works as a dessert or brunch treat and is ready in about 35 minutes. You’ll need:

  • 3 large eggs
  • ¾ cup of granulated sugar
  • ½ cup of La Panza Olive Oil
  • ½ cup whole milk
  • ½ teaspoon of salt
  • 1 ½ teaspoons of baking powder
  • 1 ½ cups of flour
  • ½ teaspoon of vanilla
  • ¼ teaspoon of almond extract


  1. Preheat your oven to 350℉ and grease an 8-inch cake pan (or line it with parchment paper).
  2. Add eggs and sugar to a large bowl and beat them until combined. Slowly add in the olive oil, whisking it in as you go. Next, add the milk and whisk it until it’s combined well. Lastly, whisk in the vanilla and almond extracts.
  3. In a different bowl, mix together the dry ingredients, and then slowly add them to the mixture with the extra virgin olive oil. Once it’s mixed in well, add it to the pan.
  4. Place the pan in the oven and bake for about 30 minutes, or until you can stick a toothpick in and it comes back clean.
  5. Let the cake cool completely before serving.
