Preparation Time: 20 minutes

  • 1/2 cup La Panza Extra Virgin Olive Oil
  • 1 cup dark chocolate, finely chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Fresh berries for garnish

Melt the Chocolate:

In a heatproof bowl, melt the dark chocolate either using a double boiler or in short intervals in the microwave. Stir until smooth.

Incorporate Olive Oil:

Slowly whisk La Panza Extra Virgin Olive Oil into the melted chocolate until well combined. Allow the mixture to cool slightly.

Whip the Egg Yolks:

In a separate bowl, whisk the egg yolks with half of the sugar until it becomes pale and slightly thick. Add the vanilla extract and continue whisking.

Combine Chocolate and Yolks:

Gently fold the chocolate and olive oil mixture into the egg yolks until smooth and uniform.

Beat the Egg Whites:

In another clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until glossy and stiff peaks form.

Fold in Egg Whites:

Carefully fold the whipped egg whites into the chocolate mixture. Use gentle, upward strokes to maintain the mousse's light and airy texture.

Spoon the mousse into individual serving glasses or bowls. Refrigerate for at least 2-3 hours or until set.

Before serving, garnish with fresh berries. The combination of chocolate, olive oil, and berries creates a delightful treat.
