OLIVE OIL CHOCOLATE CHIP COOKIES WITH SEA SALT

Ingredients

For the cupcakes:
  • 1/2 cup La Panza extra virgin olive oil
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Sea salt flakes for sprinkling
Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the olive oil, brown sugar, granulated sugar, egg, and vanilla extract. Mix until smooth and well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Fold in the chocolate chips until evenly distributed throughout the dough.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  6. Flatten each cookie slightly with the back of a spoon or your fingers. Sprinkle a pinch of sea salt flakes on top of each cookie.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
