OLIVE OIL CHOCOLATE CHIP COOKIES WITH SEA SALT

- 1/2 cup La Panza extra virgin olive oil
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- Sea salt flakes for sprinkling
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the olive oil, brown sugar, granulated sugar, egg, and vanilla extract. Mix until smooth and well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Flatten each cookie slightly with the back of a spoon or your fingers. Sprinkle a pinch of sea salt flakes on top of each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
