SAVORY OLIVE OIL PUMPKIN PASTA

Ingredients:

  • 12 oz pasta
  • 1 cup canned pumpkin puree
  • 3 tablespoons La Panza Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)
  • 1/2 teaspoon nutmeg
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • Toasted pumpkin seeds for garnish
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Pasta: Bring salted water to a boil in a large pot. Cook the pasta according to package instructions. Reserve about 1 cup of pasta water, then drain and set aside.
  2. Prepare the Sauce: In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add Pumpkin: Stir in 1 cup of pumpkin puree, 1 teaspoon of dried sage, 1/2 teaspoon of nutmeg, and salt and pepper to taste. Cook for 2-3 minutes until warmed through.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the pumpkin sauce. Toss to combine, adding reserved pasta water a little at a time until you reach your desired consistency.
  5. Finish the Dish: Stir in 1/4 cup of grated Parmesan cheese until melted and creamy. Taste and adjust seasoning as needed.
  6. Serve: Plate the pasta and garnish with toasted pumpkin seeds and fresh parsley, if desired. Add extra Parmesan on top for a cheesy finish.
