OLIVE OIL MASHED POTATOES
These olive oil mashed potatoes are a silky, flavorful twist on a classic comfort food, perfect for holiday dinners.

Ingredients:
- 3 lbs Yukon Gold potatoes, peeled and cubed
- 1/2 cup La Panza Olive Oil
- 4 cloves garlic, minced
- 1/2 cup warm milk (or plant-based milk for a vegan option)
- 2 tsp salt, plus more to taste
- Freshly ground black pepper
- Chopped chives or parsley for garnish
- Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
- In a small pan, heat olive oil and garlic over low heat until fragrant, about 3 minutes. Do not let the garlic brown.
- Mash the potatoes, then stir in the warm milk and olive oil mixture until smooth and creamy.
- Season with salt and pepper to taste. Garnish with chives or parsley. Serve warm.
