OLIVE OIL MASHED POTATOES

These olive oil mashed potatoes are a silky, flavorful twist on a classic comfort food, perfect for holiday dinners.

Makes: 6-8 servings | Preparation Time: 10 minutes

Ingredients:
  • 3 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup La Panza Olive Oil
  • 4 cloves garlic, minced
  • 1/2 cup warm milk (or plant-based milk for a vegan option)
  • 2 tsp salt, plus more to taste
  • Freshly ground black pepper
  • Chopped chives or parsley for garnish
Instructions:
  1. Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
  2. In a small pan, heat olive oil and garlic over low heat until fragrant, about 3 minutes. Do not let the garlic brown.
  3. Mash the potatoes, then stir in the warm milk and olive oil mixture until smooth and creamy.
  4. Season with salt and pepper to taste. Garnish with chives or parsley. Serve warm.
