Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup La Panza extra virgin olive oil
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Prepare wet ingredients: In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy. Slowly drizzle in the olive oil while continuing to beat. Mix in the orange juice, orange zest, lemon zest, and vanilla extract until well combined.

4. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

5. Bake the cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool the cake: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

7. Serve: Once the cake has cooled, dust the top with powdered sugar for a decorative touch. Slice and serve.
